THM S Copy-Cat Starbucks Frapachino

Well, it's been a while since my last blog. I wish it hadn't been so long, but with everything going on I didn't have much free time, hopefully now that it's almost summer I will be able to post more updates.
Getting back to the current...
Product reviews; I am always trying new products and would love to try samples from companies that make Gluten Free food so if you would like to send me a sample just email me for more info! Now for a snack recipe:

THM S Copy-Cat Starbucks Frapachino

What you will need:

Frapachino:

a blender (I usually use a NutriBullet or food processor)
6-10 ice cubes depending on the size (The more ice, the thicker it will be)
1/4 cup half-and-half for dairy free use almond milk or soy milk or for lactose free use lactaid creamer/milk
3/4 cup almond milk (I don't use "real" milk)
Starbucks via instant coffee or similar
1-2 donks of stevia to taste*

Whipped cream:

a hand mixer with whisk attachment
1/4 cup heavy cream (approximately)
1 donk of stevia
1 dash of vanilla extract

*optional, 1 donk is equal to 1/32 of a teaspoon (stevia, in it's pure sweet form, is very sweet), for stevia, you want to make sure you are getting pure stevia for a healthier option

Step 1: 

Put the ice cubes, 1/4 cup of half-and-half, 3/4 cup almond milk, instant coffee, and stevia to taste in the blender. Blend until smooth, add more stevia or cream to taste. Because ice cube sizes may vary, frapachino consistency may also vary. 

Step 4:

Put the 1/4 cup heavy cream, donk of stevia, and dash of vanilla in a bowl. Whisk on high unlit soft peaks form, and the cream's consistency has changed.

Step 3:

Pour into a cup with a straw, maybe a refillable Starbucks cup, top with whipped cream, and enjoy!

Lemonade Slushy/Snow Cone

Lemonade slushy/snow cone

Its amazing what some lemon juice and stevia can do to plain chipped ice. Last week was the local fair which we went to every day. While we were there they had snow cones for sale so I got one but all the food dyes and sugar can't be good for someone to ingest multiple times a week so I went home and made my own healthy version that tastes like one of my favorite drinks, Lemonade! Lets make gluten free, GP friendly, refined sugar free, and dye free snow cones with just 3 ingredients!

What you'll need:

A blender or ice shaver
1 Cup ice
1 1/2 TBS lemon juice
1 Teaspoon Stevia
  1. Put ice in ice shaver and turn on until all the ice is shaved.
  2. Mix up the lemon juice and stevia.
  3. Add to ice and stir in.
  4. Enjoy!

Homemade Peach Gel-O

Peach Gel-O

Its digestive track paralysis awareness month so I'm going to try and post a recipe at least one a week during the month of august that is GP friendly for most people. so lets start out with something simple! Remember being able to eat peaches and not have them bother your stomach? Or do you eat them now with GP because you love the taste so much but they kill your stomach? Well now you don't have to suffer either the lack of peaches or the great pain. Are you ready? Let's make gluten free, dairy free, no added sugar gel-o!

What you will need:

  • A Wisk
  • A bowl to form the gel-o in
  • 1 packet of unflavored Gelatin (like Knox, about 2 teaspoons)
  • 1 cup total of peach nectar (1/3 cup cool and 2/3 cup boiling temperature)
  • Optional, a natural sweetener like stevia (although I did not use anything other than the nectar)
  1. Pour the cold nectar into the bowl you are letting the gel-o set in.
  2. Whisking constantly slowly pour in the gelatin until all is completely dissolved.
  3. Add hot nectar to cold mixture and mix until all dissolved again. Optional, add sweetener.
  4. Refrigerate for about 2-3 hours or until firm.

My First Blog!

Hi all! So for my first blog I guess I should introduce myself...I'm Katie, I have Gastroparesis, gluten sensitivity and this is my blog of living with Gastroparesis and Gluten Sensitivity. For my Gastroparesis it started right after having my gallbladder removed 2 1/2 years ago I instantly started getting sick. For those of you who don't know what Gastroparesis is it basically means a persons stomach is paralyzed and doesn't empty food. Currently there is no cure for Gastroparesis, there are medicines that can help move the stomach but for a lot of people they don't work. I am lucky Erythromycin and Bethanechol both work for me for a period of time and I take Prilosec for reflux caused by this disease. One of the ways to control Gastroparesis is by eating a low fat low fiber diet avoiding spicy foods, and raw fruits and veggies and I am also gluten sensitive so I avoid all gluten. as you and can imagine this is pretty hard sometimes so I'm making this blog to help others out there who have both gluten sensitivity or Celiac and Gastroparesis. A little more about me...I love sports like basketball and volleyball and archery. I love animals and am striving to be an Equine vet. I love crafts and making cakes and cupcakes, and I also quilt so you might see some of that on here as well as recipes and snack ideas. Well that about wraps it up for my first blog!
